The chefs at Stanley and Seafort's (115 E. 34th, Tacoma) have secured (sounds so black market like) a small allotment of fresh Alaskan halibut cheeks from southeast Alaska. They will lightly bread the fish in Parmesan and Asiago, pan seared them and finished with a dab of white truffle oil beurre blanc. Sounds like how my sister gets ready for a date. - Jason de Paul.
