New chef and national TV exposure for Dirty Oscar's in Tacoma

Changes are afoot at Dirty Oscar's Annex. Chef Aaron Grissom, known for his bold originality in the kitchen, has moved on to a position in California. A new chef, Geoffrey Yahn, has taken the helm of the restaurant and bar.

"We are selfishly sad to see Aaron Grissom's talent and palate leave the Pacific Northwest, but do support his move to Manhattan Beach, California and are excited for him to continue his culinary journey there," says Operations Manager Jennifer Johnson. However, she notes that she and the staff are excited about what the future holds with Chef Yahn. "The staff is very happy with the level of experience, maturity and leadership that Yahn brings, and are looking forward to learning from him."

With more than 20 years of experience in restaurants in Seattle, San Diego and most recently, Chicago, Chef Yahn plans to take Dirty Oscar's in a more fresh direction, with lighter dishes, local produce sourcing and more gluten-free, vegetarian and vegan options.

"My background is in farm to table. Ingredients should speak for themselves. I like seasonal, clean flavors," says Chef Yahn. "I always start with the farmers market - it's as local as I can get." They are getting so local, in fact, Dirty Oscar's is exploring options to grow their own herbs and perhaps install a rooftop garden.

Also upcoming is Dirty Oscar's appearance on Diner's Drive-ins and Dives, airing at 7 p.m. April 22. "It's exciting to think of all the new people that will be exposed to the tasty, creative cuisine, and the signature moonshine cocktails we are making at Dirty Oscar's," says Johnson.  

Expect to see new dishes on the menu starting this week, including a hot pot with duck, udon noodles and spring vegetables.
