Keeping Up With The Coffeehouses: Sippin' Out to reopen

Hailey Gift is one of the more badass baristas in T-town. She's young, but at just 18 she scored a spot to compete in Seattle's Northwest Barista Classic in July 2013. She's most recently worked at the new Café Brosseau, but soon will go for the gold - with a café of her own. Well, mostly her own. She'll have a 40 percent stake in the business and will manage the day-to-day operations.

The café is next to Flippin' Out Burgers - snappily titled Sippin' Out - on South 12th Street. Gift has a vision for the sure-to-be hotspot - the first gourmet drive-thru in Tacoma.

"The big bosses name is Marina Lomis who started the coffee business up at the beginning of this year," says Gift. "But, due to some issues in management, things didn't work out and the shop has sat empty for a few months. I got in touch with her through a few connections and after discussing some shared values; she decided that she wanted to bring me in. This September I was told to go and buy anything I need and remodel however I feel is best."

There will be a sit-down area inside, too, with latte art aplenty. Gift settles for nothing but the best and favors local brands, including locally roasted Madrona Coffee, Smith Brothers Farms milk, and teas from Mad Hat Teas. Sippin' Out will also have natural syrup and dairy sensitive options, as well as few kid-friendly items.

"Though I don't 100 percent own this place, it is my new baby," she says. "I want to focus on local products and a sense of community. A lot of the time with drive-thru coffee you get the fast paced gal at the window of a joint that serves mass produced Dillanos with very few standards of what goes out other than coffee and simply that. We won't allow that. Every drink will go out at a fast and steady pace but the quality will never be compromised."

Sippin' Out will bust out a few moves that don't normally get paired up with a drive-thru, including pour over and chemex manual brewing methods. You can order these inside, but if you really don't want to get out of your car, you can also order them from the drive-thru. You'll be asked to pull forward for a short wait while your manual brew is created.

Sippin' Out will open Sunday, Oct. 6 with a grand opening special Monday, Oct. 14 - like the café on Facebook, help spread the word and you'll get a free 12-ounce drink. Write a review on Yelp or share the café on Facebook and you'll get a 50 percent coupon.
