Jake Hathcock, owner of Jake's Bar and Bistro in Steilacoom, kicks off his popular beer-tasting dinner season with "Dogfish Breakfast for Dinner," Saturday, Sept. 17.

I'm talking beer, not shark.

Dogfish Head Craft Brewery, based in Delaware, creates unusual beers using ingredients not commonly thought of when craving a cold one: juniper, honey, grape and lemon grass. While those might sound more like ingredients for wine or hot tea, Dogfish uses them all to deliver stellar beer creations.

Inspired by Finnish and Belgium beers and ancient Chinese and Honduran pottery, the beers Hathcock has selected for the event will be paired with an equally creative "breakfast" four-course dinner menu. The non-standard breakfast offerings will not to be outdone by the beers; expect savory biscuits (made in-house) with kumquat marmalade and mandarin orange-coriander butter, fresh fruits and spiced Asian congee (a rice porridge) and roasted serrano chili pepper coffeecake with bittersweet chocolate whipped cream.

Sah'tea, a rye-brewed beer based on a 9th century Finnish brew, sees lively juniper berry, coriander, cardamom, lemon grass and black tea during brewing. Paired with Grand Marnier syrup-topped spiced French toast stuffed with Gruyere cheese and black tea smoked bacon (cured in-house) may make for a taste bud TKO.
